Mango The Rock Star

Come summer and it heralds the arrival of the Queen of all fruits in tropical India, the Mango. Beautiful in its varied hues and shades, the mango has a lovely glow about it when it ripens. Some varieties are ideal for pickling, with its green skin and crispy to bite, and that oh! So sour flavour. Then there are others which are ideal for making juice which are that lovely golden yellow in colour, in which you can just sink your teeth into its succulent flesh, with its juices dripping down your fingers. Such mangoes should be relished in a very rustic or crude manner. Then come those that are ideal to be cut into neat sizes, and eaten as cubes. The mango is a rock star, among the fruits. You can puree it, cube it, pickle it, and juice it, do just about anything with it.
